Today I'm going to show you guys my favourite new recipe for blueberry scones! These are honestly the best blueberry scones I have ever eaten, all bakeries included. I don't know if it was the fresh blueberries or the delicious flaky inside, but they were amazing!

I've expressed to you all how much I love blueberries before in my Blueberry Pie Tutorial so you would understand how excited I am that someone who works with my mum owns a blueberry farm!!! So this time of year, every year, they sell huge cartons of fresh blueberries from the farm. It's my ultimate dream come true.
Yes! That whole huge box is filled with blueberries for me to eat and bake with!! You can tell how excited I am by all the exclamation marks I'm using! :) So with all these blueberries, I plan to make a lot of blueberry baked goods so stay tuned for those over the course of next week!
But the obvious first thing for me to make was blueberry scones. And these did not disappoint!! They were crunchy on the outside but so soft and flaky on the inside, and of course bursting with delicious fresh blueberries! It was a really great coincidence that I read Sally's Baking Addiction the day after I got this blueberry shipment, and saw her mouthwatering scone recipe! They really are as amazing as she says they are! I have never baked scones like this in a circle but it worked perfectly and they all got even rise and were delicious!

Blueberry Scones
Recipe adapted from Sally's Baking Addiction
makes 8 scones
Ingredients
2 cups all purpose flour
1/2 cup white sugar, plus more for sprinkling
21/2 teaspoons baking powder
1/2 teaspoon cinnamon
2 sticks butter, frozen and grated
1/2 cup whipping cream
1 egg
1 tsp vanilla
11/2 cups blueberries
Method
1. Preheat oven to 400°F and line a baking sheet with parchment paper
2. Combine the flour, sugar, baking powder and cinnamon in a bowl.
3. Grate butter into flour mixture and use hands to create a mealy texture. Create a well in the middle of the mixture.

5. Pour into the well in the dry ingredients and use a spatula to fold the dry into the wet, until fully combined. Be sure to not overmix!

6. Add blueberries and gently stir.
7. Pour out onto the tray, and form into a disc, approximately 8".

9. Bake in the oven for 20 minutes, or until browning and cooked fully through.
