I'm finally free for the summer so that hopefully means I'll be posting more! I'm starting off with a super easy peanut butter cookie recipe.
I have a huge stack of baking books that I never use so I was looking through them the other day and saw these peanut butter cookies in "Miette: Recipes from San Francisco's Most Charming Pastry Shop" and just had to make them!

I have a huge stack of baking books that I never use so I was looking through them the other day and saw these peanut butter cookies in "Miette: Recipes from San Francisco's Most Charming Pastry Shop" and just had to make them!
They are super easy to make and I already had all the ingredients at home so that always saves time! :)
Peanut Butter Cookies
Makes 18 cookies
Ingredients
11/2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter (at room temp)
1/2 cup granulated sugar
1/2 cup packed brown sugar (she calls for light brown but they worked perfectly fine with normal brown sugar)
1/2 tsp vanilla extract
1 egg
1/2 cup +2 tbsp peanut butter
Method
1. Preheat the oven to 350 degrees F and line baking pans with parchment paper
2. Use the paddle attachment in a stand mixer to cream the butter and sugars for 5 minutes until light and airy.
3. Meanwhile, combine the flour, baking soda and salt into a seperate bowl
4. Add the egg and vanilla to the sugar mixture, ensuring to scrape down the sides.
5. Add the peanut butter and beat well until smooth.
6. Add the dry ingredients and mix until just combined.
7. Roll about 11/2 tbsp of dough into balls and place them 2 inches apart onto the pan
8. Using a wet fork, put a cross-hatch on each of the cookies to make them look like traditional peanut butter cookies and to flatten them a little
9. Sprinkle each cookie with a little bit of granulated sugar
10. Bake for 10-12 minutes, until lightly browned
11. Cool on a cooling rack
12. Enjoy :)
