After my blueberry pie post, I think you all know how much I love pie but my favourite all time pie is my grandma's raspberry pie! My grandma lives all the way across the pond in Wales so I don't get to eat her baking as much as I wish I could, and I'm extremely jealous anytime any of my relatives are there eating her delicious baked goods. My mum was talking to her on the phone the other day while she was making her famous raspberry tart and pretty much as soon as she hung up, she came to me and asked me to make raspberry pie!
My grandma has a huge backyard where she grows her own raspberries, blackberries, blackcurrants and red currants. I always remember as a kid going out to the fruit cage with my brother to pick raspberries and bringing them in to my grandma to wash and then make a delicious pie! You honestly cannot get fresher fruit than that, and it just makes everything taste so fresh and vibrant. The secret to my grandma's recipe is just letting the raspberries keep their flavour and not overwhelming it with too much sugar or other fix-ins. Mine will never be as good as hers but this recipe was quite delicious and fulfilled our cravings for the time being!

Raspberry Pie
makes 1 9" pie
Ingredients
2x 9" pastry shells
5 cups raspberries (preferably fresh but frozen works too)
3/4 cup sugar
1 Tbsp lemon juice
2 tsp lemon zest
3 Tbsp all purpose flour
1 egg
1 Tbsp cream
Sugar for sprinkling
Method
1. For the pastry, you can use either your own recipe or frozen shells depending on how much time you have! I had leftover pastry dough that I froze after making those blueberries pies that I used to make this one, which was made using this recipe from Pioneer Woman. Whatever pastry you're using, roll it out to a 12" circle and transfer to a 9" pie pan. Set aside.
2. Combine the raspberries, sugar, lemon juice, zest and flour in a large bowl, and toss the berries until well coated. Don't worry if the raspberries get a little mushed up here because it is impossible to avoid! Transfer this mixture into the pie shell and spread evenly.

3. Roll out the other pastry dough into another 12" circle and place on top of the filled pie! Trim edges together, and press together to ensure it doesn't leak. Flute the edges if desired.

6. Bake in 400°F oven for 15 minutes, then reduce to 350°F and bake for an additional 30-40 minutes, or until the raspberries are nice and soft and the filling is bubbly and thick
That's it! Yummy delicious raspberry pie and it's so simple! Serve with vanilla ice cream for a yummy summer treat :)
