I'm staying at my parents house this weekend and they recently won a 6lb bag of apples from the grocery store and they seem never ending! My mum gave me the task of baking something to use up some of the apples and I thought there's nothing better for this weather than Apple Pie!
These little pies are perfect for breakfast or dessert or anything in between! They're a great balance of sweet, cinnamony and buttery and I'm super happy with how they turned out.
They look great plain or you can decorate them with any cut-out pastry shapes or pie-lattice.

Mini Apple Pies
Yield 10 mini pies
Basic Pie Dough
Ingredients:
250g flour
165g cold butter
80ml water
1 tsp salt
Method:
1. Cut butter into flour (or can process in food processor) until mealy texture
2. Add enough water to just stick dough together
3. Knead by hand to ensure it's well blended
4. Roll out about 1/4 inch thick
5. Cut out approximately 4 inch rounds (can use cutters or bowls/cups) and press into regular cupcake pan
Apple Pie Filling
Ingredients:
5 apples (I used gala but could use Granny Smith or any other baking apples)-peeled and chopped into desirable sized pieces
150g granulated sugar
2 tsp cinnamon
Pinch nutmeg (optional)
40 g flour
2 tbsp cold butter
1. Combine all ingredients except butter in a large bowl
2. Spoon into pie shells then top each with a cube of cold butter
3. Leave plain or decorate with leftover dough
4. Bake at 400° for 15-18 minutes or until crust golden brown
